The ZOILOS Early Harvest Kaba Zeytin (Yamalak Sarısı) variety is a local olive native to the Aydın region of Türkiye. Although its origin lies in the Karacasu district of Aydın, it is now cultivated extensively in the Yenice, Başaran, and Yamalak areas. The production journey begins with careful harvesting using branch shakers to ensure the olives remain intact, followed by immediate processing in modern and hygienic facilities.

Throughout every stage from olive to oil temperature is meticulously monitored to ensure both the olive paste and the extracted oil remain below 27Β°C. By fully adhering to early-harvest and cold-pressing principles, this method allows the naturally high levels of phenolic compounds in the fruit to be preserved at their maximum level in the final oil.

Thanks to this production technique, the olive oil offers a refreshing sensation on the palate. Its rich phenolic content delivers a pleasant peppery finish in the throat, a subtle bitterness on the tongue, and fresh green aromas reminiscent of newly cut grass.

All products produced by ZOILOS are stored in climate-controlled facilities maintained between 18Β°C and 20Β°C to preserve quality at its highest standard.
